So for dinner last night we had tuna melts. To adjunct this less than optimal meal I did make us a salad as well. Basically what I am trying to say is that I am in dire need of meal ideas! I need something quick and semi-healthy. I am a do-it-from-scratch kind of person. I really don't buy stuff from the box. However, times like yesterday (when Ryan decided to only take a 20 minute nap and then wake up poopy) happen and that's when I need something quick. PLEASE leave a suggestion if you have one.
Brittany, this is so fun to blog back and forth. However, we do need to get together! We can swap ideas for meal - ha! I'm really lame sometimes, but right now I really like to make soups. I'm not sure how much you like soup, but one of our favorites is Tomato Soup. (It's all from a can, but you can use fresh tomatoes if you have them.)
These are the ingredients:
2 Tbs. Olive Oil 1/2 cup chopped Onion 2 cloves chopped Garlic 2 medium Carrots - shredded 3 cans diced tomatoes 1 can tomato sauce (sometimes I had stewed tomatoes too) 1 tsp Salt 1-2 tsp Sugar 2 tsp dried Basil Any other seasoning (I had a little of a basil-based mix I have too.)
Serve with cheese (for Aaron, he loves cheese) and crackers or homemade bread. :)
Okay, so I didn't give you good instructions on the HOW of making it, but if you are interested I'll send you the typed recipe (that was from memory). :)
Pasta baby! Have some good (whole grain) pasta on hand and some sause that you can throw together in a pinch. No need to add meat or anything if you are in a hurry.
I also always keep hard boiled eggs in the fridge for those moments when we need a little snack but don't have time to make a bigger meal. James loves to peel them himself. And since you aren't vaccinating Ryan can have eggs whenever you want to give them. The egg allergy is only an issue if you are vaccinating. Or you can have the white and give the yolk to Ryan.
As far as the other recipes go, we have been loving those Eat Clean books. I have made many recipes (all the couscous ones are less than 10 minutes) and they are healthy and not too difficult to make. And they are mostly make-from-scratch meals. Even dad and mom bought the book and dad is eating the recipes (that really says something if dad will eat them). They use all whole grains and no white sugar. It is all very healthy stuff. James loves "helping" and Johnny-Lu likes watching too. It is fun to make the stuff together. Hope this helps. Ask mom about the books for all the info. There are even some protein bar and muffin recipes that would be great to have on hand in a pinch. Healthy and quick. They can go together!
There is this really quick "chili" type thing I do that is really good! My boss actually gave me the recipe and assured me it was a winner, and sure enough it is!
1 lb ground beef 1 green pepper 1 onion (or 1/2 or not at all...) 1 can of corn 1 can of black beans 2 of the little cans of tomato sauce (I can't remember how many oz they are though) 1 tsp chili powder (and whatever other spices you feel like)
You can serve it over rice if you want to, but we tend not to and eat it as chili, adding the rice does make it go a long way though, so its up to you! We usually just have biscuits or bread with it... and occasionally tortilla chips instead of spoons :)
Saute the onion with a little bit of butter. Add the meat and green pepper, as well as the chili powder. Cook until the meat is all browned. Add the beans (drained) corn (also drained), and 2 cans of tomato sauce. It tends to be soupy enough without adding water, but feel free to add some if you need it. Then just let it simmer for 5-10 minutes. And then tadah, dinner! Matt loves it! If you try it out let me know what you think :)
